Good morning.
My extended weekend sadly came to an end. It was fun while it lasted. Mostly because I had way more down time than originally anticipated. Not a bad thing. My couch is very comfy.
Confirmed this yet again Saturday night. After dinner out with the girls Saturday night, I made it home just in time for Saturday Night Live. It was being hosted by Jesse Eisenberg and I was making a point of watching it. I have a little crush. I’m aware he’s super short, but if he’s cool with it, I’ll be cool with it… Heeeey Jesse…
Super excited for the show. Fell asleep about halfway through it. Fail.
But I woke up with a bang. And did No More Trouble Zones with Jillian for my strength training (according to plan). Followed up by 15 minutes on the elliptical and a 2-mile jog. The cardio wasn’t according to plan, but I felt like doing it. See above paragraphs for the reasoning (#notmuchgoingon).
Now let’s go back to that discussion about the Mexican dinner I had with the girls:
Did I mention this came after a bowl of soup as well? And free chips and salsa?
*It needs to be mentioned here that I don’t always take part in the free chips and salsa. But oh man… whatever is in that salsa should be illegal.
Needless to say, I came home with leftovers.
And because I’m a recessionista (which sounds so much nicer than “cheap”, don’t you think?), I took a page from Megan @ Braise the Roof and did a leftover remix.
My entire Sunday has a mexican spin to it.
Like lunch:
Sure, the leftover enchilada is straight-up ugly.
Oh wow. Looking at it again, it really doesn’t look appetizing at all.
Don’t judge a book by its cover, people. It was perfect just the way it was. Until I inhaled it.
Dinner required a little more creativity. All that was left was a ton of fried rice and a good portion of the black beans. So I broke out a wrap, added some cheese, and called it a burrito.
Almost as good as the night it was served.
Three meals out of one. Thank you, Salsa 17.
Now if only I still had leftover frozen margarita…
Seriously. It would be appreciated this week. Chicago is being prepared for a little thing called a blizzard this week. And the tequila would double as a way to keep me warm.
Seems to be we were feeling left out with all the crazy weather going on in the northeast that we demanded to be in on it. Good times.
That probably means I should hit the grocery store. For eggs. Some frozen food. Wine.
You know… The essentials.

Mmmm…that dinner looks great. I’ve been on a Mexican food kick recently. I usually love it but the past couple of weeks especially I’ve been craving it nonstop. This blog, of course, did nothing to stop that.
I do apologize… lol. I’ve been on quite the Mexican food binge recently.
I always pretend like I’m going to do something great with leftovers, and it never happens. I’m lame like that.
Now I want Mexican food pretty badly. That burrito sounds so good, I love that idea.
I usually think the leftovers are 10x better than the original meal. Plus it makes lunch more exciting!

Uh yeah, that storm is supposed to hit like the entire country. Don’t worry it’s headed this way too! I love leftovers. Love.

Stop complaining, you all are only getting a foot of snow, shouldn’t be too bad !! I kidd, I kidd. That sucks. Hopefully you wont have to go into work or will you?
Call me crazy but that enchilada still looks gorgy. Leftover Mexican is usually ugly thouh but I dont go for looks, I’m all about whats on the inside. It’s very Shallow Hall of me.
That’s the question up in the air- I’m seriously going to cry if they expect me to come in on Wednesday… I have no idea how I’d do it.

My husband and I high five eachother when we can get that many meals out of one restaurant meal! =) Flipping love it! saving money and eating deliciousness 3 times instead of one? yes please! <3

Hehe ‘recessionista’ I love it! We had mexican take-out this weekend too. It only lasted for 1.5 meals, but I loved every minute of it!
i stretched one salad into three the other day and felt so great about it!!!

Yesss leftovers. I rarely have leftovers from Mexican because I can’t control myself with a plate of cheesy food in front of me. I like the leftover bean/rice repurposing- you know I’m proud.
I’m actually sort of dreading this snow storm- there are too many things going on this week!
I know- it better not mess with our plans!
ugh i need to go to the grocery store badly too. although part of me want to not just to spite mother nature. silly logic right?

I seriously love Mexican food – and leftovers are just icing on the cake! Jay and I usually have to fight over them………..and I usually lose to be honest….
I have a slight crush on him too. He was super “I’m too cool for this” during his interview with E! last night. Aloof, emotionally unavailable, cocky? Yep, sounds like someone I would date.

We’re supposed to get a blizzard too, though Oklahoma tends to overreact. I’m on a spending freeze so I’m hoping the 3/4 bottle of wine will get me through. If not I think I have some Kahlua I could pour into hot chocolate. Yes….

But actually, I heard he’s super super shy and hates interviews… so I find him that much more adorable. :p

I LOVE Mexican food! And the servings are always so big so I almost ALWAYS end up with leftovers (which is the best!)
I’m all about making my leftovers (and therefore money) go as far as possible.
There is never a bad time for Mexican food! My husband’s family is Mexican, so I LOVE hanging out with them and getting the real deal. Haha your “essentials” sound a lot like mine

I love Mexican…but I honestly like it homemade MORE than when I go out (although we ate chipotle yesterday and I could never recreate something so good!) ha
