What’s a Fluffernutter?

When I was little, I was NOT a very healthy eater.

Not that I’m the epitome of healthy eating now. But I still like to think I’m pretty good about keeping myself balanced and in check for the most part (you may question this statement by the end of the post).

But not when I was little. To be specific, it’s the school lunch that killed it for me.

My teachers had to have been concerned when all I’d eat was bread every day and the cinnamon rolls they’d serve once every few weeks. Every once in a while I’d eat the peanut butter they’d set out on occasion for the bread.

Snack time was no better. Pretty sure if there were a lactose intolerant kid in my class, even they would have gotten more stars for finishing their milk than me.

Even as a young tyke, I was a defiant little booger.

Point of my story is that I hated school lunches. I grew out of it a little, but was so frustrated that I wasn’t allowed to bring lunch from home. In my school, not many people did. But I wanted to. Maybe for the food. Maybe for the cool lunch box (I heart Lisa Frank). Whatever reason, I wanted to bring my own lunch.

So you can see how I’d also feel a little jipped about missing out on the classics. Snack packs with the fake cheese. Pudding cups. Juice boxes (even though I hated juice, it irked me).

And the fluffernutter sandwich.

Bread + Peanut Butter + Marshmallow Fluff.

I actually didn’t know this combination existed until much later in life. And, quite frankly, am not sure if children should be allowed to eat such massive quantities of sugar and call it their lunch for the day.

But that’s a debate for another day.

Either way, it exists and it sounds like a lovely thing. So when browsing recipes for the BBQ I went to on Monday, this was one of the options I sent to Mon (she was the final vote).

I think she ended up picking the fluffernutter cake bars because of the name. Pretty sure she won’t deny it if you asked.

The recipe for the fluffernutter cake bars came from Picky Palate’s website. She’s pretty much a genius in taking desserts one step further to make them over-the-top delicious. My kind of gal. :)

Anyway, what’s nice about this recipe is the ingredient list is short and as often as I bake, most things are kept on hand.What? You don’t keep marshmallow fluff on hand?

*And yes, I do love my natural peanut butter from Trader Joe’s, but when it comes to baking, I buy the processed stuff with sugar in it. I think it tastes better in most baking. And I’ll stand by that statement.

One thing I will suggest- do not bake these early in the morning after a night out. You’ll swipe way more “batter” than normal. Oops.This leads to sugar coma by 9:30 in the morning if you’re not careful. Again- oops.Man I really need to polish my tea pot. That’s just shameful.This is the point where I always get nervous. And also why I’m much better at/more comfortable with cookies. Is it done? Is it good? Will the grocery store be open for me to buy a cookie cake if they’re awful?Turns out I was quite safe. My favorite part was the yellow cake mix crust- kind of like the ooey gooey butter cake I made earlier in the year.

The marshmallow/peanut butter “cream” party was very rich- but not overly sweet. Good for if you decide to mass consume. ;)

In all honesty, I think the ooey gooey butter cake edges these out in the dessert bar category, but these are a good alternative. Promise!

Now I don’t feel so left out from getting the cool school lunches anymore…

How was the school lunch program in your part of the world?

I eventually expanded my tastes to include the big slices of square pizza and burritos that were quite suspect. Um- yum?

  1. My favorite memories of school lunch are how in elementary school we went through a period of having to drink bags of milk instead of cartons. Something about saving room in landfills, but we all just sprayed each other and boys put the milk bags down their shirts and pretended to have boobs.

    I was a huge fan of fluffernutter sandwiches. My mom still has those for lunch and she’s in her 50s. :)

  3. I always had to bring my lunch to school…and was jealous of all the kids whose mother’s didn’t care and let them buy. French toast sticks? Chocolate milk? Chicken patties? YUM.

    I did get snack packs though…and traded for the french toast sticks frequently.

  4. I hated school lunch. Luckily my mom always packed me a pretty bomb packed lunch in my little mermaid lunch box. I did enjoy tomato soup and grilled cheese day though…

  5. I just showed these to my nephew who is a fluffernutter expert…these are on our “to make” list immediately! YUM! I never had a fluffernutter as a kid, but have as an adult. There are few things that yummy!

  6. I packed pretty much every day but I was definitely guilty of sacrificing my turkey and cheese sandwich and going for chicken fingers & fries more than I’d care to admit… oh the days when I could eat whatever I wanted…oh that’s right, that’s never been true.
    That dessert looks amazing and like I pillow I’d like to sleep on (face down.)

  7. YUM! What a brilliant idea for a sandwich. I ate awful as a kid – think pizza pops, chips and pop for lunch every day. Blegh!

  8. We always brought our own lunches. Every few months there would be a “hot lunch” and you had to choose ahead of time what you were going to order. Sometimes it was hot dogs and you got to pick your donut, sometimes it was mcdonalds, and sometimes it was pizza. I loved it.

    And can you believe I’ve never had marshmallow fluff? Ever.

  10. I only got to buy lunch rarely- my mom usually packed mine. And she preferred plastic wrap to baggies, so it was always a struggle getting into my food. I was always jealous of the people who got big subs and chicken nuggets, but looking back I probably came out on top with that one, huh? I hope you saved me one of those. Otherwise we might have to do some baking together soon. :)

  13. You know, i don’t like marshmallow fluff, although you’re probably not surprised by that since I don’t like peanut butter either. They look good though. I always brought my lunch from home, I didn’t trust the caf food.

  14. I totally have fluff on hand :) Which means I’ll be making these. I only liked school lunches in HS…Turkey and Gravy!

  15. I loved fluffernutter sandwiches! I can’t believe they still sell it – haven’t seen it or tasted it (sadly) in forever! I was a “bringer” when it came to school lunches. And that often involved fluffernutter.

  16. I never had a fluffernutter sandwich until about a month ago when my husband made one! We had leftover marshmallow fluff from a baking experiment (gone wrong) and I think he ate it all in 2 days. No joke. The boy loves the stuff. Which means he would LOVE these bars!!

  17. We *had* to eat the school lunches in England…but then maybe around 4th grade you could bring food. In middle school, we were all about buying the seriously oily “cakes” during morning break. Those things were nasty but you had to get one, pull pieces off it and look cool doing so.
    I’ve NEVER had a fluffernutter. Seriously.

  18. This looks and sounds amazing! I used Fluff for making oatmeal creme pies in the winter, but before that, it was the only time I used the stuff! Turns out I think I know what will be my second time:)

    School lunch program sucked in FL. All I remember was the crappy square cut so called pizza they used to serve. It makes me throw up in my mouth a little if I think about it.

  24. I was the worst eater as a child. I was SO thin my mom was freaking out but there was nothing she could do because I wouldn’t eat unless whatever she was trying to feed me was covered in chocolate.

  28. I never had fluffernutters as a child. Good thing also. My diet was not healthy in the least. Potato chips were often a staple of my school lunch. And string cheese..that’s healthy, right? It’s all relative, I suppose. I also only use the processed peanut butter in baking. The natural stuff really doesn’t do much for flavor in these things. Plus you’re making a fluffernutter, for heaven’s sake. You have to go all out for that!

  30. I’ve never had marshmellow fluff in my life and for some reason I don’t feel like I am missing out. Okay truth…it just scares me. I never had Nutella untl a few years ago and it became quite a dangerous obsession…I can’t go down that road again. I feel recovered and marshmellow fluff would be the one thing that probably sends me back to the dark side. hahaha!

    I ate school lunches until 7th grade or so (and LIVED for the pizza and chicken nugget days) but I then brought my lunch until I graduate. Oh yeah, I was cool in high school.

I just learned about the fluffernutter the other day (although I didn’t know it had that name). :) As far as school lunches, I think it is ridiculous that they don’t let kids bring in their own food. As a mom, it irks me that the decision of what I’d like my child to have for lunch is taken away from me (and also that I’d have to pay for school lunches). Now as a kid, I grew up in Japan and we didn’t have a cafeteria but could order for the local restaurants like the teachers did (very small school). That was always fun and a treat. This Mom’s Guide (http://www.1dental.com/moms-guide/) says that tooth decay is one of the most common illnesses among children. I wonder how much those school lunches contribute to that?

  35. i grew up eating the shit out of some fluffernutters…never tried to turn them into a dessert. i’ve made oatmeal with pb & fluff a LOT!
