My Tuesday started with a massive headache.

This comes as no surprise. It was Tuesday, after all.

And Tuesdays are just, like, sooooo stuuuupid.

Instead of raging my way through the work day, I really tried to keep it all in check. And channeled the energy elsewhere.

Running with these ladies, to be exact.

Kim and her friend Carrie! Due to my weirdly rotating work schedule, this only happens every other week or so, but it’s always a fun conversation and distraction from my regular workout routine.

We all ran and took our turns venting for 6 miles. It was therapeutic. And I felt fabulous afterwords.

Until throwing myself directly into Bulls and Cubs traffic afterwards. This left me slightly wound up again.

Luckily, there are ways to de-stress at home, too.

Comfort food helps.Or something that, in my frugality, sort of resembles it. A cheap and healthified Mexican dinner for this chick would be a quesadilla stuffed with the refried beans my roommate bought and now refuses to eat (it’s a texture thing), skimping on cheese and overloading on hot sauce. And a side of brussels sprouts to make my mother proud.

It is almost Mother’s Day, afterall.

As a side note, can we talk about how the quesadilla maker could be the greatest invention of all time?

There’s also the option to give your mind an escape.This puzzle is really coming along, kids. The roommate and I have grand plans to spend one night in this weekend in hopes of putting the finishing touches on this baby.

We’re wild.

But I’d like to have it done sooner than later. No joke, I had a dream about it last night. My roommate had deconstructed it. At this point, that may even be considered a nightmare. 2000 pieces is no joke, kids.

Because the day was a doozy, I even went the baking route.Other than obvious reasons of loving cookie dough and the cookies themselves, I really do enjoy the process of baking. Not quite sure the logic behind this, but it makes me feel all happy inside.

Or maybe that’s just the sugar high talking?

Because there’s a friend with a baby coming soon, I thought I’d send some love her way in the form of the Cookie Butter Stuffed Cookies debuted a few weeks ago. Recipes aren’t repeated in this kitchen often, but when everyone raved about them, how could I not?

I made a smaller recipe this time around. But thankfully, there’s still one this morning that was purposely left out of the care package. And it has my name on it. Expect me to have a sugar crash at my desk around 3pm.

After all that, my annoyance from the day finally subsided. Right before it was time for bed.

Funny how that works.

Oh Tuesday. You won again!

  1. I absolutely love jigsaw puzzles. Two thousand is TOUGH. I have cats and kids, so it’s really tough to get through a whole puzzle without a few pieces growing legs and walking off.

  2. I love puzzles! I need to get one. I haven’t done any in quite some time. Tony and Max both had massive headaches yesterday. The weather here has been so crazy with all the rain and pressure from the temperatures dropping. I’m glad you feel better. I hope you have a great day today!

  4. I so do NOT miss the Cubs/Bulls traffic!!! My commute to work used to be only 12 miles but took about an hour each way because I lived a block from Wrigley.

    I’m a HUGE fan of anything mexican, so thanks for that quesadilla pic…now I’m craving mexicano before 10am!

  5. I love a good therapeutic run/vent! I need to get in on a quesadilla maker– I have them at least once a week! I like to add shredded chicken and sometimes even spinach to mine.

  6. OH MY GOODNESS! I thought I was the only adult that loved puzzles. Such fantastic news!

    Also, I share your hatred for Tuesdays. Have I told you that? I love Mondays (because they are a fresh start) but Tuesdays are just getting in the way of my week.

  9. I do think baking is therapeutic, and plus then your house smells so yummy. but then I have to quickly make plans to get rid of the results so I don’t launch into a sugar coma. I usually bring them into work and let other people consume them and save a few for myself.

  10. I have a can of refried beans in the pantry I can’t seem to get it up for. I now I’d like them if I’d make them, but I keep avoiding them. Maybe I should go the quesadilla route!

    I’m quite glad you made it through Tuesday. Crazy enough, I’m not even sure I remember Tuesday. This week has been a weird one. I think it’s withdrawal. From booze or friends I’m not sure. Probably a combination of the two.

  12. Sometimes I think we were separated at birth. Baking makes me feel all happy inside, too. And I’m never one to turn down cookie butter! :)

  17. I have never EVER been good at puzzles. In fact, I don’t think I’ve ever put one together on my own. I’ve helped people, but I’ve never actually wanted to put one together myself. I mean, I’m sure I did when I was little and the pieces were as big as pancakes…but you know what I mean :) I’m impressed, Amy!

  18. I kind of love puzzles as they are a great escape but then hate them instantly. 2000 pieces? Better you than me. I wouldn’t be able to sleep till it was finished.

  20. Those cookies look awesome Amy! I love baking too but I do it rarely since I have absolutely zero control around cookie dough :) . I admire your will power to only have one!!

  21. Yo quiero quesadilla… and cookie. My parents used to have a quesadilla maker, and I used the heck outta’ that thing. I want one now, but I don’t think I have room for more kitchen gadgets.
