I Can Totally Do This

Ok guys.

I’m done whimpering.

People far busier than me can do it. And they do. Because they prioritize what they do during the day. And act accordingly.

This morning workout thing can happen. Sure, work is an hour earlier than what I’m used to. And sure, I may have to break it up on days that I can’t QUITE get up right on time.

But this is happening. Like Friday? I got in a little under 3 miles. And that was getting up at the same I had been with my old hours.

And if I get up 15 minutes earlier? A solid trip to the gym can happen. Like on Monday. Or a 4.3-mile run can happen. Like this morning. We’ll just ignore that the rabbits and rats seem to be partying down before 5:00 in the morning.

Seriously. The rabbits can stay. But 3 rats chillin’ on the sidewalk as I run by? Not cool. 

And what if I decide to sleep in 15 minutes later? Well- I can still get a few circuits from my Jillian workouts in. Flexibility is the name of the game.

I can do this.

Totally.

And yes. That phrase will be repeated. Every morning. Until I believe it.

In other news, I found another thing I can totally do.Bake vegetables into things.

Before you judge me, just listen:

I’m not a super big fan of things like carrot cake (but, if we’re being honest, I’ll eat it for the cream cheese frosting). Or things of the nature.Healthy things don’t go into baked goods. It’s just not right.

Usually.

My old roommate from a few years ago made the meanest zucchini bread back in the day. And even sent it to me once after she moved away.Yes. I loved it THAT much.

However, it has never been made in a kitchen of mine since then.

That changed this weekend.My mom not only gifted me with her presence, but also an entire grocery bag of potatoes and a separate entire grocery bag of larger-than-life zucchini.

Don’t believe me when I describe how big it is? Check it out:Yes. The zucchini slices are almost as big as my bagel thin pulled pork sandwich. The pulled pork was the free food from the ‘rents that my roommate scored over the weekend.

Practically a free meal!

We’re living the dream this week, kids.

But anyway… where was I?Oh that’s right- baked deliciousness. The zucchini bread muffins were adapted from this recipe.

Minus the walnuts. Because they’re expensive and I didn’t have any.

What I did have was a lot of wheat flour hanging around. So I swapped 2 cups of regular flour for the wheat variety. Just for kicks.

Also, because I lack a loaf pan (it’s so embarrassing), I made bread “muffins”. Which worked out well- easier to grab and go:I’ve said it before and I’ll say it again- we’re all about streamlining these days.

  1. I LOVE zuchinni bread and I usually make mini muffis with them; bite sized deliciousness.

    Once you get into the habit of morning workouts its NBD. Summer is a good time to get into the routine because its light so much earlier; it’s a lot more difficult to get up in the pitch black of winter.

  2. I love zucchini muffins…um especially the 5,000 calorie ones from Starbucks. Um…yeah.

  3. You know I love me some zucchini muffins! YUM! Also, free food is the best kind! You will definitely get into the groove of things. I’m completely getting off schedule this summer and it will hurt to get back at things early in the morning again come school time….

    Morning workouts are hard! Especially if your schedule is changing. Good for you for getting some in!

  5. I have made zucchini turkey burgers before– those are good! My mom used to make zucchini brownies and zucchini bread and I would tell her: stop putting vegetables in baked goods! But I guess she was just trying to get us to eat our vegetables. I always did.

    I like that you actually used a muffin pan instead of loaf pan. Very streamlined. :) I’m all about prepping ahead. Though if I make it to the gym once a week by 7 I’m calling it a success.

  6. Good job on the morning workouts! I have to get up later than I used to, and still can’t do it. I did randomly do some weights this morning though since I know I’ll be out late at HH.
    I love zucchini muffins! Those look great.

  7. It’s a habit, once you start going every morning I promise they’ll be more forgiving. You got this!!

    As for veggies in baked goods, I’m surprised how often you can’t taste them. This is an awesome recipe! And who would have thought zucchini and Betty Crocker could be friends.

  8. Morning workouts and I still have a love/hate thing going on. The actual working out part isn’t so bad, but sometimes I just can’t drag myself out of bed. Like this morning. I tried, it wasn’t happening.

    The love/hate thing goes with zucchini bread too. I love it, but when I was little my mom told my brother and I it was banana bread so we would eat it. Apparently I’m still a little bitter about that.

  11. Zucchini bread/muffins are a summer favorite. My mom makes a mean zucchini chocolate/choc chip cake, too.
    Great work with the AM workouts!
    I had to get the dogs out for a walk at 6am today to beat the heat. Felt great to be active so early.

  12. Did you make me any muffins? Ask Kacy- they’re my favorite! I get up at 4am four to five times a week to workout. You DO get used to it…took me about 2 weeks and I was good to go. I also go to bed at around 8/8:30pm on school nights now too. Gah…

  13. I tried to use up my zucchini last week and it was an abomination. I should have stuck to muffins!

  14. I need to give myself that same pep talk – and listen to it and act. Starting tomorrow…

    When I was growing up my grandparents had a massive garden. Like, gargantuan. And there was always an abundance of zucchini. So I’ve had zucchini prepared in more ways than I care to remember…But I have always been a fan of zucchini baked goods. By the end of summer I usually have like three loafs of zucchini bread in the freezer.

  15. I hope the transition gets better. There’s nothing like having the schedule you’ve had for years be totally upended. Ugh. At least you have still run super fast recently. :)

  16. I wish I can say that the transition gets better but I’m still struggling with every early morning run! The after-effects are always worth it so keep that in mind when your alarm goes off and you wanna basically cry and die instead of get up. I feel ya
